I had another shot at making up a value-range cake mix and used the last bag of Morrisons Savers Sponge Mix.

I used my new 15cm Lakeland My Kitchen range pans which were slightly smaller than the instructions recommend by 1cm.  Again, just one egg and 5 tablespoons of water are all that’s needed to make up the sponge.  The cake cooked to perfection and I sandwiched the two sponges together with my trusted BeRo buttercream recipe and homemade black cherry jam.

The comments were some of the best I’ve heard for my home bakes, even the home-made chocolate sponge I made from scratch didn’t beat it in the comment stakes.

As I suspected this basic sponge mix was transformed when it was ‘pimped up’.  Buttercream and jam is clearly the way forward.  It did look pretty and as one colleague commented “one of the best cakes I’ve tasted in a long time.”

Taking into account the butter and icing sugar and jam, this cake would still cost less than £1.50 whilst the chocolate cake almost £4.
